Spinach, strawberry and feta salad

The combination of super-fresh crisp spinach, sharp juicy strawberries and salty full flavoured feta is a marriage made in heaven. The honey and cracked pepper brings out the best of all the flavours.

Serves 4

Equipment needed

Optional hand blender

For the salad

  • 200gm loose leaf spinach, washed and dried
  • 250gm fresh strawberries, washed stalked and cut into halves
  • 150gm feta cheese, cut into 3mm thick strips

Method

Simply toss the ingredients together and serve as freshly as possible.

Dressing

Serves 6 comfortably

  • 1 tablespoon grain mustard
  • 1 tablespoon honey
  • Juice of half a lemon
  • ½ teaspoon cracked/fresh milled pepper
  • Pinch sea salt
  • 1 tablespoon water
  • 100ml rapeseed oil

Method

Whisk together (or whizz with a stick blender) the honey, mustard and lemon juice until smooth. Slowly add the rapeseed oil a little at a time (like a mayonnaise) so the dressing is smooth, glossy and stays together.

Finally add the water (to let the dressing down to improve the texture) then the cracked pepper and sea salt.
