Simple salsa verde recipe
This tangy herby dressing takes minutes to prepare, will keep for a good week and is a delicious accompaniment; particularly with cheesy pastry.
25gm fresh parsley
25gm fresh mint
25gm fresh coriander
25gm fresh basil
1 large clove garlic finely chopped
Juice of 1 lime
1 tablespoon cider/white wine vinegar
1 tablespoon honey/maple syrup
120ml light olive oil/ rapeseed oil
75gm baby capers (rinsed and shaken dry)
Blend all the ingredients apart from the capers into a rough green puree, then mix in the capers.
